I am so happy to finally share a wedding-related post! Yeah!!! After pausing ALL wedding planning for three months due to the pandemic, I now find myself trying to keep up with my to-do lists every day. There is just SO much to do. I now understand why wedding planning is a full-time job!

Hope you guys had a great weekend! We enjoyed lots of sunshine, and I laid out in a swimsuit for the first time in nine months. It only took us seven months to return to shorts weather, I missed it!
May arrived with warm weather, this has allowed us to start a routine where we enjoy time on the terrace at the end of my fiance’s work day. It has been quite a delight doing that at sunset. Another highlight of May was my birthday! The first gift arrived the night before at around 10 PM. My fiancé ordered a bouquet of sunflowers to be delivered to our home – he knows how to brighten a quarantine birthday 😉 The following day I video-chatted with family and friends, enjoyed a little walk outside with him and our pups, had a quick celebratory drink on the terrace, and finished the day with a delicious take-out dinner from our favorite Thai restaurant. Because a birthday wouldn’t be complete without some cake, he ordered that as well.
Our wedding is in 100 days! The next few months are going to be good. We will finally get to travel up north for our food tasting, I will be sharing with you guys a sneak peek of our wedding venue, and I will make a final decision on a wedding dress. Happy Monday! How are you guys hanging in there?? Yesterday we decided to keep ourselves busy with some cooking and baking… he made the most delicious slow cooker chili, and I made these oh-so-good banana bran muffins. I made a dozen, six with walnuts, and six with semi-sweet chocolate chips. Not only are these muffins easy to make, they require ingredients that I bet most of you already have at home. We will be enjoying them in the morning and afternoon, slightly toasted, with marmalade on top (for me!), and butter for him. 🙂
Feliz lunes! ¿Cómo están? Ayer decidimos entretenernos cocinando un poco… él hizo una receta de frijoles de cocción lenta, y yo preparé estos muffins de banana que me encantan. Hice una docena, seis con nueces y seis con chocolate. Estos muffins no solo son fáciles de hacer, sino que requieren ingredientes que la mayoría de ustedes seguro ya tienen en casa. Los disfrutaremos por la mañana y por la tarde, tostados, con un poco de mermelada encima (¡para mí!), y mantequilla para él. 🙂
Banana Bran Muffins
1 mashed ripe banana
2 cups whole grain wheat cereal
1 egg, beaten
1 cup milk
1/4 cup vegetable oil
1/4 cup sugar
1 cup all-purpose flour
1 tbsp baking powder
1/2 tsp cinnamon
1/2 tsp salt
(optional) walnuts, chocolate chips or pecans
Preheat oven to 400 F degrees.
MEDIUM BOWL: combine milk and cereal, let stand for 5 minutes. Add the oil, egg, and banana to the cereal / milk mixture; mix all.
LARGE BOWL: stir together flour, baking powder, sugar, salt, and cinnamon.
Make a well in the center of the bowl with dry ingredients. Add cereal / banana liquid mixture, stir just until moistened.
Spoon batter into greased muffin pans, filling 2/3 full.
(Optional) Mix in 4-5 chocolate chips into a few muffins, and/or mix in crushed walnuts or pecans ~ for variety.
Bake at 400 F degrees for 25-30 minutes until golden.
Makes 12 muffins!

My fiance says they taste a bit like cardboard (ha!), but they are jam-packed with tons of nutrients that are needed for a complete breakfast…

Bronzing powders are, in my opinion, one of the best make-up creations ever. Guerlain’s terracotta light is a must-have that lights up your complexion while giving you a long lasting sun-kissed glow. This one is pricey, but a little goes a long way…
Clinique’s liquid facial soap is an amazing cleanser that I have been relying on for the last three years. It is one of the few ‘gentle’ cleansers that I feel does a great job of removing all traces of make up. It is also free of fragrance, and rinses away very easily (a must!).
Hello friends! I truly hope you guys are doing okay, some days are easy, others not so much!! Back in February my parents had purchased flights to come to NYC in May, and I had planned to travel to Miami in July, to stay at my parents for a few days and enjoy the beach that I miss so so much.
