Banana Bread with Sour Cream
A couple of days ago I decided to make a loaf of banana bread with sour cream for the weekend. I had bananas that were ripe, a fresh new bag of brown sugar, and an unopened box of pecans.
Luckily, I also had sour cream in the refrigerator, which I rarely do so I took this as a sign. I prepared a loaf of banana bread, and later on, went to bed looking forward to a toasted slice of banana bread the following morning. Yum!
INGREDIENTS:
- 4 mashed ripe bananas
- 2 large eggs
- 2 cups of flour
- 3/4 cup of light brown sugar
- 80 grams of sour cream
- 115 grams of butter, at room temperature
- 1/2 ground cinnamon
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/4 tsp salt
- (optional) 3/4 cup of chopped pecans
INSTRUCTIONS:
- Preheat the oven to 350 F (170 C).
- Grease a loaf pan.
- MEDIUM BOWL: whisk all dry ingredients together (flour, cinnamon, baking soda, and salt).
- LARGE BOWL: mix the light brown sugar with the butter until creamy. Add the eggs and continue mixing. Add the vanilla extract, the mashed bananas, and the sour cream.
- Combine the wet ingredients with the dry ingredients. Be careful not to over-mix this!
- (Optional) Mix in chopped pecans – for crunchiness.
- Pour the mixture into the greased baking pan.
- Bake at 350 F for 60 minutes. Insert a toothpick and see if it comes out clean. If it does not, bake for 2-5 additional minutes.
- Yields 8-10 slices!

Wrap the banana bread in aluminum foil while you bake it in the oven. Remove the aluminum foil paper during the last 15-20 minutes.
How do I freeze and store banana bread?
Banana bread freezes really well. To freeze a loaf of banana bread, slice it, wrap the slices in plastic wrap, and then wrap it in aluminum foil. I then place them inside an air-tight container.
Otherwise, I will store the banana bread in a glass container in the refrigerator for up to a week.
