
Italian Sausage, Potato & Spinach Soup
An old neighbor shared this AMAZING recipe with me several years ago, and I have made it every winter since then. It’s been in the 20s in New York City, so it’s the perfect time for a bowl of this flavorful soup! I’ve been staying cozy with my fuzzy socks, big soft blankets, and warm cups of water.
Ready to make this potato and spinach soup recipe? You can substitute the Italian sausage for ground beef, turkey, or chicken. The spinach can be replaced with kale, and the red potatoes can be replaced with tortellini, but I would not use yellow potatoes because they do not hold up very well.

How to Make a Sausage, Potato, and Spinach Soup
Instructions
(1) Wash and cut the potatoes into bite-sized pieces, dice the onion, and mince the garlic cloves. The red potatoes do not need to be peeled.

(2) Heat 1 tablespoon of olive oil in a Dutch oven over medium heat. Cook 2 or 3 Italian sausages (without the casing) until brown. Drain excess fat.
(3) Add the onion, 3 cloves of garlic, and spices. Cook until the onion has become translucent (3 minutes).


(4) Add the chicken broth (or water mixed with chicken bouillon cubes) and wait until it boils. Once it boils, add the potatoes and cook for about 20 minutes.

(5) Stir in the spinach for 1 minute. Mix in the heavy cream (half and half for a lighter soup) for 1 minute. Serve immediately.

Ingredients for Italian Sausage, Potato & Spinach Soup
- 2 or 3 Italian sausages (mild or spicy)
- 3 big handfuls of fresh spinach
- 1 medium onion
- 3 cloves of garlic
- 5 cups of chicken broth
- 1/2 teaspoon of dried basil
- 1/2 teaspoon of dried oregano
- 1/4 teaspoon of red pepper flakes
- 1 pound of small red potatoes
- 1 tablespoon of olive oil
- 1/4 cup of heavy cream (or half & half)
The ingredients above will yield 4 bowls of soup.
