
Orzo with Spinach, Feta & Lemon
I came across this one-pan orzo recipe at NYT Cooking, and because I love feta cheese and lemon, I knew it would be good. If you love recipes with lemon zest, try this lemon spaghetti with ricotta, one of my all-time favorites.

Orzo with Spinach, Feta & Lemon
Instructions
1. Wash, trim, and slice the scallions thinly. Mince the garlic cloves.
2. LARGE PAN: Heat 1 tablespoon of olive oil over medium heat. Stir in the garlic and three-quarters of the scallions (save some for garnish) for 3 minutes or until softened.
3. Stir in the spinach (in batches if necessary) for 2-3 minutes, until the spinach is wilted.
4. Add the broth (chicken or vegetable), and lower it to a simmer. Stir in orzo and lemon zest. Cover and simmer over medium-low heat until the orzo is nearly cooked through, stirring a few times.
5. Lower the heat, stir in the peas, cheese, and parsley, cover, and cook for 1 minute.
6. Serve, sprinkle with more feta cheese and the reserved scallions!

- 1 cup of orzo
- 5-6 cups of spinach
- 1 lemon
- 4 scallions
- 1 cup of parsley
- 2-3 garlic cloves
- 3/4 cup of crumbled feta
- 1/2 cup thawed frozen peas
- 2 cups of chicken or vegetable stock or broth
This recipe yields 2 servings of orzo.

A final note!
I like to add spinach at the end, but when preparing this specific dish, it is better to add spinach during Step 3 above.
