Chicken Parmesan Recipe
Who else is a big fan of chicken parmesan?? This 30 minute meal is as good as it gets!
INGREDIENTS:
- 2-3 chicken breasts or 5-6 cutlets
- 16 oz spaghetti
- 2-3 eggs
- 3/4 cup bread crumbs
- 1/2 cup flour
- 1/2 cup grated mozzarella cheese
- 1 cup parmesan cheese
- fresh basil, chopped
- salt & pepper
- 3 cups of marinara sauce (I made mine with the ingredients below)
- 1/2 yellow onion, chopped
- olive oil
- 3 garlic cloves, minced
- 28 oz crushed tomatoes
- dried oregano
- salt & pepper
- fresh basil
INSTRUCTIONS:
- Cook spaguetti in a large pot of water, according to the time listed on the package.
- Preheat oven to 425 F degrees.
- If you have chicken breasts, slice them in half.
- SMALL BOWL: whisk the eggs.
- MEDIUM BOWL: place the flour.
- LARGE BOWL: mix bread crumbs and shredded parmesan cheese together.
- One by one, season each piece of chicken with a little salt and pepper.
- Using a fork, dip each piece lightly in flour, then dip lightly in the eggs, and finally coat each side with the bread crumbs. Use another fork to help press the crumbs on the chicken!
- Coat a large pan (medium/high heat) with olive oil.
- Cook the chicken on the pan in batches, 3 minutes per side, or until golden.
- Pour some sauce onto a baking dish, add the chicken, and top each piece with sauce and mozzarella cheese.
- Bake 15 minutes at 425 F.
- Serve cooked pasta with chicken on top, and garnish with basil.
- Makes 5-6 servings!

A final note!
You can either get cutlets or two breasts that you will cut in half (so they are half as thick). You can use your favorite marinara sauce, or make your own like I did. Either way it will taste great!
To make this recipe gluten free, I used GF flour, Gillian’s GF bread crumbs (the only GF option that I found at Whole Foods Market), and Wegman’s GF brown rice and quinoa pasta that I discovered in 2019 and have been buying since then.
