
Warm Arugula Apple Salad
I have lost count of the times I’ve made this salad… It’s easy to prepare variations, depending on what you have in your fridge and pantry.
Here’s a formula that I use to remember how to make this warm salad:
- Choose a grain: I typically use either quinoa, bulgur, or farro
- Choose one green: I love arugula, but also use spinach
- Roast one orange-colored vegetable: carrots, sweet potato or butternut squash
- Apple
- Chickpeas
- Feta Cheese
- Walnuts
I love balsamic vinegar mixed with olive oil, a little salt, and fresh lemon juice.
You can pair this warm salad with eggs, chicken, salmon, or tuna. Other ideas include: goat cheese, dried cherries instead of walnuts, and fresh basil.
Mix it well, and enjoy!
