This delicious apple tart always brings back memories of my childhood. It is one of my mom’s favorite desserts – and mine!
My fridge has been full of EverCrisp apples from this orchard for about a week, so it was the perfect time to turn a few of them into a delicious tart.
If you love apples as much as I do, this recipe is for you!




The only equipment you will need to make this apple tart is a blender, like this one.
Be sure to have the milk, eggs, and butter at room temperature. I usually take them out of the fridge an hour before I start the apple tart.
Once you’ve mixed all the ingredients in a blender, pour them into a round pan. Decorate the tart with apple slices, and bake it in the oven for about an hour.
(1) Wash and peel your apples.

(2) Cut 2-3 apples into cubes, and leave the others for later.

(3) Next up, you will use a blender to mix the ingredients. This is the blender I have at home.

(4) Mix the apples with milk, eggs, butter, cinnamon…

(5) … sugar, and flour.

(6) Pour the batter into a 9-inch tart pan. Decorate on top with thin apple slices.

(7) Bake at 350°F for approximately 50 minutes.

(8) Important Step: Refrigerate the tart for 1-2 hours.
Your home will smell like a bakery once your apple tart is done!

A final note!
The exact number of apples you use to make this apple tart will depend on the size of each apple. My EverCrisp apples were quite large this time (from an orchard upstate), and I used three for the mix and two for the tart’s decoration.

If you have an excess of ripe bananas in your kitchen, use this easy recipe to turn them into a delicious chocolate chip banana bread!
The options are endless! You could also use your bananas to make Banana Chocolate Chip Muffins, Banana Bran Muffins, or Banana Bread with Sour Cream.

Servings: 10 slices
INGREDIENTS:
Take the eggs, butter, and bananas out of the fridge an hour before you start.
INSTRUCTIONS:
1. Preheat oven to 350 F.

2. Peel and mash your bananas with a fork.

3. LARGE BOWL: Mix butter with sugar, and add two previously beaten eggs.

4. MEDIUM BOWL: Whisk together dry ingredients: flour, baking soda, and salt.

5. Add the dry ingredients to the banana mix, and incorporate well.

6. Fold in 3/4 cup of chocolate chips, and pour everything into the bread pan.

7. Sprinkle the remaining 1/4 cup of chocolate chips over the top, and bake at 350 F for 60 minutes, or until a toothpick inserted in the center comes out clean.

8. Let the bread rest for 30 minutes, and transfer to a cooling rack.

This chocolate chip banana bread recipe always turns out well, and I enjoy it so much that I eat the slices straight out of the fridge!

Today I am reviewing Dagne Dover’s Indi Neoprene Diaper Bag, the bag that I am currently using the most! With a newborn at home, and the weather so lovely in New York City, we try to go for short walks or to a nearby coffee shop, at least once a day because this mama (and baby!) enjoys being outside. What I love about this backpack are the pouches, and pockets inside that help me keep all of my baby’s essentials accessible and organized!

I love that I can fit diapers, clothing, wipes, snacks, blankets, my nursing shawl, a changing mat, a tech organizer, and more. There is even room for a tablet in this bag! I have found this nursing shawl to be incredibly practical. The neckline is very wide, allowing me to keep an eye on my baby at all times. The fabric is breathable and has tiny holes, and I’ve noticed that my baby can see through them. It is an elegant shawl, so I even brought it to a black-tie wedding. At this point, I have used it every time we’ve gone somewhere. I always recommend this shawl!

I keep this tech organizer inside my backpack because it keeps my phone charger and AirPods securely in one place. I recommend this organizer bag for any travel bag, backpack, diaper bag, or work bag, it will make your life easier!
The best way to clean your Dagne Dover backpack is by hand washing it with mild detergent and cold water.
After you are done cleaning your bag, you need to reshape it while it is still wet. Neoprene bags are not machine washable.

Yes! Dagne Dover bags are wonderful, that’s why I wanted to share a review of my backpack on my blog. While I usually keep my Indi backpack in my stroller’s storage, when I wear the bag over my shoulders, the wide straps make the bag feel comfortable on my back. These bags are versatile, well-made, and easy to clean (this is important!).

WHERE WE REGISTERED
I used Babylist and Amazon to create our baby registry. For Babylist I added the bookmark plug-in to my browser and then gathered baby items to the registry. One cool benefit of Babylist is that you can pick items from anywhere (Target and Amazon included).

TRANSPORTATION
Stroller: UPPAbaby VISTA V2. I was looking for a stroller capable of surviving the streets of New York that could last us many years. I also wanted lots of storage space and big wheels. We are currently using the bassinet, and it’s been fantastic.
Car Seat: NUNA Pipa Aire rx
Travel Stroller: CYBEX Libelle 2 in Lava Grey
Baby Carrier: Omni Breeze and Armadillo

NURSERY MUST-HAVES
Cotton Changing Pad Cover in Gingham Pink
Waterproof Changing Pad Liners (Amazing! I use one on the stroller’s bassinet too.)


Baby Monitor: Owlet Dream Duo 2, an FDA-cleared sock that tracks and notifies you of your baby’s pulse rate and oxygen level with real-time notifications. I am happy to have this! It has given us peace of mind now that our baby is home!
South Machine: Nanit Sound and Light (I love that it has a clock too!).
FEEDING
I pumped during the months that our baby was in the NICU, and most of that milk is currently in our freezer because she received formula at the hospital. Since she arrived home, I have been nursing her, but if I need a break, we use the bottles in our freezer.
The quickest and safest way to defrost frozen breast milk is to place the bottle or bag where the milk is in a bowl with warm tap water for 5-8 minutes. Never re-freeze breast milk once thawed.

Stay Dry Disposable Nursing Pads (I can’t live without these!)
Nursing Pillow: I had a C-section so I love the Brest Friend Nursing Pillow! It has a wraparound design that clips around your waist, an adjustable strap, enhanced lumbar back support, and a thick firm cushion to hold the baby. The cover is machine washable.

HEALTH AND GROOMING
Bath Tub: Angelcare Baby Bath Support is inexpensive and ideal for babies! I highly recommend this item.
Shampoo: Hypoallergenic Baby Wash & Shampoo
Nail File: These nail files are made of real glass, and are perfect for babies. We began using these in the NICU.
CLOTHING & BLANKETS
Swaddle: Cotton Sleepsack Swaddle (The BEST of all the swaddles we tried).
Blankets: Cotton Muslin Blankets in Pink Springfield (So practical).
Cloths: Organic Burp Cloths 5-Pack
Onesies: Magnetic Me Onesies
Outfits: Cotton Sleeper Footie
ORGANIZATION
Drawer Dresser With Changing Table
Foldable Box Organizers: I put these inside the drawers.
Diaper Bag: I picked a medium-sized backpack.
Tech Organizer: I keep my AirPods and charger in it.
OTHER BABY ITEMS
Pack N’ Play in Kagen: I picked this one for traveling, but it is currently being used in our living room! Just another safe space for our baby to play in.

Lovevery Play Gym: An award-winning play mat that is incredibly entertaining for babies and offers a whole year of play. My only regret is not taking the mat out of the box earlier, but we got a late start due to our baby’s severe reflux. From the minute I laid her on the mat, she became a different baby, rolled from side to side, and reached milestones she had not before.
Putting a baby on a mat is preferable to a swing so they can practice their motor skills, stretch their legs, and kick freely. So if you can’t choose which one to get for your baby, I would highly recommend getting a baby play mat.
Baby Playpen: I added this 47″ Baby Playpen With Mat because it has a gate! We have dogs, and I want them to be around the baby while the baby is in a pet-free zone!
Portable Changing Mat: I keep this one in the diaper caddy in our living room.
A final note!
While we love holding our baby in our arms, we also rotate her between her Lovevery play gym and the pack-and-play.

Hello, friends! Baby girl arrived 49 days early in February 2024, and we are overjoyed to have her with us. She spent almost 2 months in the NICU (too long!) and made it through thanks to the medical team at Mount Sinai Hospital in New York City. Here are some photos from when we welcomed our sweet girl home!

On February 15, 2024, I headed to the hospital for a regularly scheduled ultrasound at 8:00 AM, not knowing that I would not leave the hospital until the end of February.
Several reasons made this pregnancy high-risk, so my doctor decided that I should be hospitalized and monitored from then on. It was only the first day of week 32 of my pregnancy, and my hospital bag was not even ready!

The following five days went by slowly, but I felt strangely calm. The goal was to make it to week 33 while ensuring we were both okay.
I was dealing with polyhydramnios (a medical condition seen in only 1% of pregnancies) and the risk of uterine rupture due to my prior surgery. Our baby was dealing with a condition herself, one that we had learned of just four days before Christmas.
Would she make it? Would she be healthy? With so much risk and uncertainty, I spent the days praying to God and reminding myself that if He wanted a positive outcome for us, He would make it possible.

On February 20, 2024, my husband arrived at the hospital at 8 AM for the ultrasound that changed our lives.
I remember being wheeled back to my room and feeling numb after we were told that (I am omitting the exact prognosis) the pregnancy had worsened tremendously. One of my sisters FaceTimed me at 10:30 AM, and while on the call with her, my surgeon, Dr. Callipari, rushed into my room and yelled, “Ana, surgery in one hour!”
Within a few seconds, I had a medical team around my bed, and I was being prepped for surgery. Then my doctor reappeared, and together we walked to the operating room located on the opposite side of the floor.
I was terrified. Once inside the OR, I met the anesthesiologist and started getting flashbacks of my previous surgery. The room was filled with specialists, including the neonatal and pediatric team that was ready to help our daughter during the first minutes of her life. My husband was standing right outside, waiting to be called in.
The surgery took about an hour – quite possibly the most uncertain hour of my life. At that point, there was only one concern on my mind, our daughter’s life and well-being.

The next part is where I tear up. When our baby girl was born, I did not get a chance to see her as she was immediately taken for assistance.
Also, because I developed pre-eclampsia, I was hooked to a magnesium machine for twenty-four hours, and unable to see her until the following night. When I finally saw her, inside the incubator, I couldn’t stop the tears from gushing out of my eyes. I couldn’t believe she had made it and was in front of my eyes.
What followed were 49 days in the NICU (the neonatal intensive care unit of a hospital), and daily commutes to the hospital to spend up to ten hours per day at her side.
It wouldn’t be until about a month later, March 10, that my husband and I were allowed to hold her in our arms, for five minutes each.
A few days later, on March 13, I did skin-to-skin with her for the first time – twenty-two days after she was born. Finally, on March 21, she tried breastfeeding for the first time.

Being a NICU parent for almost eight weeks is one of the hardest things I’ve done in my life, both mentally and emotionally. Physically, too, because instead of resting post-C-section, I was commuting for over an hour, daily, to see our baby.
We are currently figuring out life with a newborn, and snuggling her as much as possible!

We have made it to week 32 of the pregnancy, something that back in December seemed impossible to achieve!
During weeks 31-33 is when the eighth month of pregnancy usually starts.
Regarding the baby’s size, at 32 weeks pregnant, babies weigh around 4 pounds and measure about 11 inches in length, crown to rump. So our baby is about the size of a cabbage! How cute!

How do you cook zucchini noodles so they don’t get soggy?
To avoid soggy zucchini noodles, I suggest cooking them al-dente, this means 1-2 minutes if you choose to sauté them, or 2-3 minutes if you prefer to boil them.
Do you peel zucchini for zucchini noodles?
There is no need to peel zucchini before spiralizing them.
