It feels like Spring! The weather in New York City has been lovely, and I find myself craving more fruits. I recently picked up some oranges and grapefruits, and decided to try them on an avocado bagel toast – the result was absolutely heavenly.
Avocado Bagel Toast
INGREDIENTS
- 1 avocado, sliced
- 2 citrus fruits: oranges, grapefruits, or tangerines
- 2 bagels, toasted
- 2 scallions, chopped
- radicchio, shredded
- 1 fresh lime, squeezed
- almonds, chopped
I made fresh lime vinaigrette by mixing juice from one fresh lime, 1 tsp of mustard, 1/2 cup of olive oil, and 1 clove of garlic, grated. Then I added salt and pepper.
INSTRUCTIONS
Two bagels will yield four servings. If I am making this avocado bagel toast for us two, then I will only use one bagel, and I serve the toasted bagel halves on two plates.
Begin by placing the shredded radicchio on each plate, and then assemble the bagel on top. Add the avocado slices, citrus fruits, and scallions.
Drizzle with lime vinaigrette, and add the chopped almonds.
