Banana Chocolate Chip Muffins
These Banana Chocolate Chip Muffins are such a treat! You will only need 3 bananas, your favorite brand of chocolate chips (I prefer Ghirardelli’s semi-sweet chocolate chips), and pantry staples that you likely already have.
Whenever I have extra ripe bananas I try to make this amazing banana bread recipe (with sour cream) or any banana muffin recipe, including this banana bran muffins recipe that you will love!
You can always make these muffins, freeze them, and enjoy them later as a snack!
INGREDIENTS:
- 3 ripe bananas, mashed
- 3/4 cup of chocolate chips
- 1 1/2 cups of flour
- 2/3 cup of sugar
- 1 tsp of baking soda
- 1 tsp of vanilla extract
- 1/2 tsp of salt
- 1/2 cup vegetable oil
- 1 egg
INSTRUCTIONS:
- OVEN: Preheat to 375°F.
- Peel bananas and mash them with a fork.
- LARGE BOWL: Mix sugar, bananas, egg, oil, and vanilla extract.
- MEDIUM BOWL: Mix flour, baking soda, and salt.
- Mix everything together and add in the chocolate chips.
- Pour the mix into a muffin pan. I prefer this nonstick pan and I spray it with cooking spray.
- BAKE: 18-20 minutes or until a toothpick comes out clean.
- COOL: 5 minutes in the pan before removing and placing on a cooling rack.
- Makes 12 muffins!
