
Arugula & Grain Bowl
I have lost count of the times I’ve made this bowl… It’s easy to prepare variations depending on what you have in your fridge and pantry.
Here’s a formula that I use to remember how to make this warm salad:
- Choose a grain: I typically use either quinoa, bulgur, or farro
- Choose one green: I love arugula, but also use spinach
- Roast one orange-colored vegetable: carrots, sweet potato, or butternut squash
- Apple
- Chickpeas
- Feta Cheese
- Walnuts
I love balsamic vinegar mixed with olive oil, a little salt, and fresh lemon juice.
You can pair this warm bowl with eggs, chicken, salmon, or tuna. Other ideas include goat cheese, dried cherries instead of walnuts, and fresh basil.
Mix it well, and enjoy!
