Zucchini Bread With Yogurt

INGREDIENTS
- 220 grams of flour
- 2 eggs at room temperature
- 1.5 cup of zucchini, shredded
- 1 spoon of baking powder
- 1/2 spoon of baking soda
- 1/2 spoon of salt
- 1 spoon of cinnamon
- 1/4 spoon of nutmeg
- 1/2 cup of vegetable oil
- 65 grams of sugar
- 65 grams of brown sugar
- 1/4 cup of Greek yogurt
- 2 spoons of vanilla extract
INSTRUCTIONS
- Oven 350 F.
- Cut both ends of the zucchini, wash, and shred.
- Mix dry ingredients in a large bowl.
- I like to put the flour through a strainer as pictured above.
- Mix the eggs with the shredded zucchini, sugar, yogurt, and vanilla.
- Combine ingredients, but don’t overmix.
- I use this 9″ x 5″ x 3″ loaf pan.
- Bake for 60-70 minutes, or until the wooden stick comes out dry.
- Let it rest outside the oven for one hour.
