Lemon Spaghetti
Spaghetti with lemon, ricotta, and spinach is probably one of my favorite pasta dishes in the universe.
I love the taste of lemon, so I find this recipe completely irresistible.
Each time I buy ricotta to prepare lasagna, I reserve 1/2 cup of ricotta to be able to prepare this dish a couple of days later!
Ricotta
- You can buy one at the store, or make it at home.
- It will be mixed with parmesan cheese and olive oil.
Spinach
- I prefer fresh spinach instead of the frozen kind.
- It will be boiled with the pasta for 1 minute only.
Ingredients
- 200 grams of spaghetti
- 1/2 cup of ricotta, part-skim
- 1/3 cup of parmesan cheese
- 3 handfuls of fresh spinach
- 1 tbsp of olive oil
- lemon zest
- salt & pepper
- optional: lemon slices
Instructions
Lemon spaghetti is a simple recipe that will take you 15 minutes to prepare.
- MEDIUM BOWL: Mix ricotta with parmesan cheese, olive oil, and lemon zest.
- Boil a pot of water and cook pasta – al dente – per the instructions in the box.
- 1 minute before the pasta is ready, add the spinach (cook it for 1 minute only).
- Drain the pasta and the spinach very well. Reserve 1/2 cup of pasta water.
- Put the drained pasta back in the pot.
- Add the ricotta mix and a bit of the pasta water that you had reserved, but be careful not to exceed it because then you cannot undo it.
- Mix well until it is creamy.
- Garnish with lemon slices, if you’d like.
- Enjoy!
